Food Friday - Asparagus Salad

This week's recipe comes from my mother. 

Raw Asparagus Salad

1 bunch asparagus, pencil-thin
1/2 of a medium sweet onion, chopped finely
Juice one lemon
2 T very good olive oil
2 cloves of garlic, pressed
1 t. Salt
2 oz Parmesan cheese, coarsest grated, or chopped up small.
Black Pepper to taste.


Wash the asparagus, and snap off the tough ends.
Slice all of it up very small, so that each piece of asparagus is the size of a pea.
Combine everything else, mix to coat with dressing.
